I relearned this lesson the other day, and would save you all from the explosion that results when you don’t. The misery of the cleanup far outweighed the convenience of the blast that completely removed the skin from the flesh of this volatile vegetable. Eggplant guts on every available surface in my oven. So, when you have a craving for eggplant dip, and who doesn’t every once in a while, remember to release some steam first. Before putting it in the oven always, always use a fork and poke yer eggplant.
