Ensalada Nada De Verde

Some people are just blessed. Our good friend Michelle makes the best salads ever. I mean it. You can’t make a salad to touch hers – they’re from another dimension or something. Or maybe she has magic salad powers. If you’d like to try, here’s one of her recipes for us mere mortals. Give it a try.
“Ensalada nada de verde”
4 carrots, grated
2 small apples, diced
1/2 cup dried cranberries
10 – 15 dates, chopped
thumb of fresh ginger, grated
1 1/2 cups cheddar cheese, cubed
3-4 tbsp. sesame seeds, toasted
1/2 cups almonds, chopped
Dressing:
1 cup yogurt
1/2 cup olive oil
juice of one orange
2-3 tbsp sesame tahini
grated ginger (to taste)
2-3 pods cardomon, freshly ground
This will serve 2 if it’s the meal, 4 if it’s the starter. Hope you love it as much as we do!
