Spring is in the air

We arrived right at the opening of Vancouver’s last “Winter” Market of the season. Other than mealy apples, winter was nowhere in sight. Spring greens from pea shoots to tatsoi, strawberry plants, garlic scapes, leeks and wild mushrooms all accompanied the walk home. But two spectacular finds stood out above all- wild mallard duck eggs and a small bunch of fresh asparagus. The asparagus was quickly tossed with some olive oil and grilled. The duck egg fried sunny side up. Served with some grilled bread and finished with Maldon Sea Salt and Renato Fenocchio Olive Oil. The Trout Lake Farmer’s Market opens May 15- you should go.

    oOo, the seasonal offerings of spring. Delicious! Totally going to the Trout Lake Farmer’s Market. Will also be at the Westend + Kits market soon.

    So inspiring. And I found the duck eggs at the market too. Sadly, no fresh asparagus that week so improvised with Tuscan black kale. My take was garlic and sundried tomato pesto rubbed toast topped with the kale sautéed with shallot and smoked capicola ham from Columbus meats and a garnish of Maldon salt. Here’s a photo.
