Twas three nights before Christmas and all through the house, not an idea for dinner was thought of until my pal Pete told me he was doing Shepherd’s Pie for his. On a day when Vancouver got walloped with a remarkable 30cm+ of snow, something comforting, homemade and rich with vegetables and fresh ingredients was required. Plus, it’s really easy to make and you can vary it as you please. (You can adjust the amount or kind of veg or use lamb instead of beef, whatever you like! The fresher the ingredients the better, as the fresh criminis really enhanced flavor.) This recipe (with additional tips from an old Martha Stewart cookbook) was quickly added to our home database of favorite recipes that we love to share with friends and family.
